We currently make 3 varieties, each catering to different tastes and dietary preferences.
This is the traditional and most prevalent form of kimchi, served as a side dish, and cut to bite size slices. It is made primarily of napa cabbage, or "baechu" in Korean. At Mama Kim's, we make it using our own combination of chili powder, fruit, and seasonings.
A completely vegan version of sliced kimchi.
Baek-kimchi or white kimchi is a variety of kimchi made without the chili pepper powder commonly used for fermenting kimchi in Korean cuisine. Baek kimchi has a mild and clean flavor, which appeals to children and the elderly, to whom the regular kimchi might be too spicy.
